In the anime Erza's mother points out that she was preggers with erza for around 400 years so is erza technichally 400 years old

Yes and no. She was in Irene's belly for the entire 400 years. So since she wasn't technically 'born' yet, you cannot count her age. In that way, no, she's not 400 years old. But if you do count all the years she was in her belly, then she'd be over 400 years old.
