I only got into the amazing world of anime very recently, but, so far, I really loved Berserk, Death Note and Inuyasha are my "favourites" (still haven't finished Inuyasha - which I watched for the first time around 10 years ago haha).

Some people actually prefer the original series which covers a lot of the same material, but with a different emphasis on certain events and the story winds up going in significantly different directions, so you might want to check out both. Personally, I preferred Brotherhood which is supposed to follow the manga more closely.

I watched the original Full Metal Alchemist and never watched Brotherhood. But they say Brotherhood is so much better.

But yeah skip the original one. haha
